Vegetable Fried Rice


 I am going through a phase now where I just absolutely must have vegetable daily. Which is a great thing for me since summer is coming. The latest craving had me chopping up a bunch of fresh french beans I have in the fridge with half a large red bell pepper for a simple vegetable fried rice. Since I have some leftover rice pilaf from supper the night before, I have decided to recycle the rice pilaf instead of making some plain rice. It was absolutely delicious and I am planning on making this over and over again till the craving is gone. Meanwhile, bring on the greens!

Vegetable Fried Rice Pilaf
Serves 4 as part of a multi course meal
Ingredients 
2 cup cooked rice, either fresh or leftover
1 cups fresh french beans, sliced thin
1/2 large red bell pepper, diced
1/2 onion, diced
2 stalks of scallion, thinly sliced
1 Tbsp canola or vegetable oil
salt and pepper to taste

Directions


Step 1: Heat a wok over high heat till slightly smoky.


Step 2: Add in the oil and onion. Cook till onion is translucent, about 1 min.


Step 3: Add in the beans and bell pepper. Add in 1/4 tsp salt and 1/4 tsp of black pepper. Stir occasionally. Cook till vegetable has softened slightly, about 3 mins.




Step 4: Add in rice. Continue to stir till everything is combined. Adjust seasoning. Add in a little more salt, if necessary. Lastly, add in the scallion. Dish up and serve.
