Recommendation: serve with pumpkin seeds on top and fresh black pepper.
Ingredients:
¼ cup extra virgin olive oil
1 carrot, diced
1 celery stalk, peeled and diced
2 cups butternut squash, cut into smaller than ½‐inch dice
Salt and freshly ground black pepper
6 cups water
Steps:
1- Put 3 tablespoons of the oil into a large, deep pot over medium heat. When hot, add the carrot and celery. Cook, stirring, about 5 minutes.
2- Add the butternut squash and sprinkle with salt and pepper.
3- Cook, stirring, for a minute or two, then add the water.
4- Bring to a boil, then lower the heat so the mixture bubbles gently.
5- Cook, stirring every now and then until the vegetable is soft, about 30 minutes.
6- With a hand blender, blend the butternut squash until smooth.
8- Taste and adjust the seasoning, add the remaining tablespoon of olive oil and serve.
